Baked Stone Fruit Sliders

Blissful Breakfasts!

For the pancakes:
1 ½ cups flour
3 tbsp. sugar
1 tbsp. baking powder
¼ tsp salt
¼ tsp cinnamon
1 tsp vanilla
2 large eggs
1 ¼ cups milk
Butter or cooking spray

For the fruit:
2 Medium Nectarines
3 Ripe Peaches
2 Ripe Plums
1 tsp cinnamon
2 tsp vanilla
Agave or Honey for glazing fruit

For the pancakes:

  1. Mix together dry ingredients and wet ingredients separately
  2. Combine wet and dry ingredients
  3. Bake pancakes on skillet with butter and set aside to cool

For the fruit:

  1. Slice all fruit into thin slices
  2. In a small bowl whisk together the agave, cinnamon, and vanilla.
  3. Lay fruit out on baking sheet and bake in oven for 10-15 minutes at 425 degrees.
  4. Allow fruit to cool and then assemble “sliders.” Place a heaping spoonful of fruit on one pancake then top with another pancake.

You can add yogurt or whipped cream, or even lowfat vanilla ice cream!
