Baked Stone Fruit Sliders
For the pancakes:
1 ½ cups flour
3 tbsp. sugar
1 tbsp. baking powder
¼ tsp salt
¼ tsp cinnamon
1 tsp vanilla
2 large eggs
1 ¼ cups milk
Butter or cooking spray
For the fruit:
2 Medium Nectarines
3 Ripe Peaches
2 Ripe Plums
1 tsp cinnamon
2 tsp vanilla
Agave or Honey for glazing fruit
For the pancakes:
- Mix together dry ingredients and wet ingredients separately
- Combine wet and dry ingredients
- Bake pancakes on skillet with butter and set aside to cool
For the fruit:
- Slice all fruit into thin slices
- In a small bowl whisk together the agave, cinnamon, and vanilla.
- Lay fruit out on baking sheet and bake in oven for 10-15 minutes at 425 degrees.
- Allow fruit to cool and then assemble “sliders.” Place a heaping spoonful of fruit on one pancake then top with another pancake.
You can add yogurt or whipped cream, or even lowfat vanilla ice cream!
