Egg-In-A-Hole Grilled Cheese

Sumptuous Snacks!

2 (1/2-inch) slices of your favorite bread – Sourdough or French bread are great choices
1 tablespoon unsalted butter
1 large egg
1/3 cup your choice of shredded Cheddar, Mozzarella or Parmesan cheese
1 cup diced mushrooms
1 cup quartered cherry or grape tomatoes
Salt and Pepper to taste
Garlic and or Cajun seasoning is optional

Season and sauté mushrooms and tomatoes and set aside.

Using a biscuit cutter or the rim of a drinking glass, cut a 2 1/2-inch hole from the center of one slice of the bread. Melt butter in a medium nonstick skillet over medium-low heat. When it foams, place the cut slice of bread and the round in skillet and toast lightly, about 1 minute.

Crack the egg into the hole and season with salt and pepper - Cook until golden brown, about 2 minutes.

Flip the egg bread, sprinkle half of the cheese on bread and top with mushrooms and or tomatoes (or leave them out should you want to go the simple yet delicious conventional grilled cheese route) – Season with garlic or Cajun seasoning if you so choose. Place second piece of bread on top and close sandwich. Cook until well browned and bottom part of cheese begins to melt, about 1 minute more. Flip whole sandwich and cook until all cheese is melted, about 2 to 3 minutes more. Serve hot and enjoy!
