Garlic Potatoes with Onions

Amazing Appetizers!

This simple recipe delivers a side dish with massive flavor. The combo of garlic, crispy onions and golden crunchy potatoes will complement any meat, chicken, fish or vegetarian entrée! 

2 lbs unpeeled small red or fingerling potatoes
1 tbsp salt
½ tsp ground black pepper
½ tsp cayenne or blackening seasoning
3 tbsp extra virgin olive oil
4 cloves of garlic crushed into a paste
One sweet Vidalia Onion – super thinly sliced
Fresh Italian parsley

Potatoes should be cubed and in a bowl, combine them with the oil, salt and pepper; toss to coat. Transfer to a large sauté pan and on medium heat, sauté potatoes until tender.

Cut the onion in half and slice super thin. Add onions to pan with potatoes and stir. Cook for an additional 7 minutes and then add in garlic paste, Cook for an additional 3-5 minutes until potatoes are golden brown, onions are crispy. Don’t overcook or garlic will burn.

Finish with a garnish of roughly chopped Italian Parsley and serve by itself or any kind of accompanying sauce you’d like (Ketchup, Chipotle Mayo, balsamic reduction etc…). Enjoy!
