Old Fashioned Potato Salad with Green Beans

Amazing Appetizers!

This creamy favorite has been seen at countless tables. It has all the traditional ingredients - except for the green beans which spices it up a bit. FYI – This recipe is also Gluten Free!

2.5 lbs of New or Fingerling potatoes
1 lb washed and cut green beans
1 cup mayonnaise
1/4 cup sour cream
1 1/2 teaspoons prepared mustard
2 celery ribs, finely sliced
1 tsp dried tarragon (can use fresh if available)
1/2 cup onion, finely chopped
1 Tsp Cider Vinegar
2 Tsp Garlic/herb powder
2Tbsp Olive Oil
Salt and Pepper to taste

Peel the potatoes and cut into one inch cubes. In a large pot, cover the potatoes in water and boil until tender, about twelve minutes. Be careful not to over-cook them. Drain the potatoes and place in the refrigerator to cool.

Sauté green beans for 2 minutes green beans in olive oil, seasoning with salt, pepper and 1 tsp of garlic/herb powder. Remove from heat set aside.

In a large bowl, add all of the remaining ingredients and mix well.

Add the potatoes to the bowl and stir gently to coat. Add green beans, mix thoroughly and season to taste. Cover and chill until ready to serve.
