Baked Apples

Delightful Desserts!

This recipe couldn’t get easier or yummier! It’s a phenomenal way for kids to get a healthy snack or dessert when they would normally opt for candy or cake! You can make these on Monday and enjoy them all week long! Enjoy!

INGREDIENTS:
4 small Cortland or Rome apples (6 ounces each), cored
1/2 cup dried raisins or currants (I like golden raisins!)
1/2 cup light brown sugar
1 tsp cinnamon
1-2 cups of water just to cover the bottom of the baking dish (can use apple juice instead for a more intense apple flavor)  
Non or low-fat yogurt for a topping (Chobani apple yogurt is GREAT or you can go really decadent with ice cream if you want something richer)
Walnuts (optional)

DIRECTIONS:
1. Preheat the oven to 350°. Arrange the apples in an 8-by-10-inch baking dish, leaving space between them. Fill each apple cavity with 2 tablespoons of raisins or currants. Mix the cinnamon into the brown sugar and then sprinkle over the apples and into the dish.

2. Cover with foil and bake for 45 minutes, or until the apples are tender but still holding their shape. Transfer to plates and drizzle with the pan juices. Serve with a dollop of yogurt on top.
