Raisin Griddle Cookies

Delightful Desserts!

These cookies make you say, “Who needs an oven?” Easy and delicious, you can go the raisin route, or if looking for an even more decadent treat, go for chocolate chips! Either way, they’re yummmmmmy!

1 Cup Sugar
1 ½ tsp baking powder
1 tsp salt
½ tsp baking soda
1 egg
1 cup of sweet butter
¾ cup milk
3 ½ cups of flour
1 ¼ cups of Raisins (can substitute chocolate chips)

Mix dry ingredients. Cut in butter. Add in egg, milk and raisins (or chocolate chips). Dough will be stiff. Using bench flour, roll with rolling pin until dough is ¼ inch thick. Cut with knife or cutter. Lightly oil a cast iron skillet or a griddle. Place cookies on it and brown one side – the tops will puff up. Then turn and brown the other side. Serve warm.
