Rainbow Gnocchi

Enlightening Entrees!

  • 4 large Idaho Potatoes

  • 2 cups plus 2 Tbsp flour

  • 2 large eggs

  • 2 Tbsp salt

  • Pinch of pepper

  • Food dye

  1. Cut up and cook potatoes until tender

  2. Peel and mash potatoes and form into a well

  3. Sprinkle flour over potatoes and mix together by hand

  4. Create another well with the potato/flour mixture and break eggs into it along with salt and pepper

  5. Lightly beat eggs with fork and then incorporate potato flour mixture

  6. Work dough until completely consolidated and then separate into small balls. Roll balls into long lines or “snakes”

  7. Use knife or dough cutter to separate into small gnocchi

  8. Roll small gnocchi on edge of fork to create small indents

  9. Boil gnocchi in lightly salted water until they float to the top, immediately take out and cool

  10. Serve with sauce of your choosing or sprinkle of fresh olive oil and parmesan!
